Hello everyone, and welcome back to the Priston Mill blog! After what has been a busy, and really enjoyable summer and autumn we thought it’d be great to give our lovely readers an insight into some of the trends that we've seen this season, and of course provide a little inspiration for those of you planning to get wed in the coming months.
We have noticed a a huge increase in the number of fully vegetarian and vegan weddings recently, with at least one taking place per month at Priston Mill, which is our charming countryside wedding venue, just outside of Bath. We must say we absolutely love the challenge, and the chefs are not only incredible at creating delicious plant-based menus, but they also enjoy the variety that a fully vegetarian or vegan wedding brings.
Here at Priston Mill we have a wide selection of vegetarian and vegan options. Check out a selection of our favourites below:
Starters:
Mushroom and chestnut pate with tarragon, picked cucumber and crostini
Sweet potato, spinach and carrot falafel, spiced cauliflower puree, cumin yoghurt
Sourdough bruschetta, burrata, asparagus, peas and radish
Mains:
Puff pastry case of wild mushroom and asparagus spears with a lemon and chive butter sauce
Spinach pumpkin and chickpea curry with rice and winter vegetables pakoras
Beetroot, squash, lentil and kale wellington with a mushroom cream sauce
Desserts:
Dark chocolate torte, raspberry gel and pistachio crumb
Lemon posset, poached rhubarb, lemon and tythe shortbread
Raspberry frangipane tart with white chocolate shards and raspberry sorbet
Due to the popularity of full vegetarian and vegan weddings we have added some new delightful dishes coming to our dedicated vegetarian and vegan menu ‘To Graze’. Some that we are excited to see soon in 2023 are:
Starters:
Sichuan fried cauliflower with salsa matcha and mint yoghurt
Chickpea patty with carrot purée and crispy kale
Beetroot and minted peas with charred feta
Mains:
Butternut and sage soufflé with crispy sage and a pecan and apple salad
Mushroom and asparagus risotto with truffle oil *
Desserts:
Chocolate mousse with raspberry coulis and an almond and chocolate soil
Lemon cheesecake with blueberry gel and meringue
However, we are also seeing that more and more brides and grooms and their guests are choosing to adapt their diet to meet their personal preferences such as having a gluten free and dairy free diet. Due to the numbers of alternative ingredients being widely available to us now our wonderful chefs Martin and Rosy can adapt more and more of our dishes to meet these needs so you and your guests can have an enjoyable meal on your special day!

Now you’ve heard about our vegan wedding menu options, its time to think about vegan wines for the wedding breakfast and toast drinks!
Our most popular white wine which is popular amongst all our couple and is vegan friendly is the Dominio De La Fuente Organic Verdejo, Spain. But we can’t forget about those red wine lovers, the Five Ravens Pinot Noir, Romania would be the perfect match for your vegan wedding!
Now for speeches, what better drink but the Bouvet Saumur Rose Brut NV, France to finish off the wedding breakfast just before the evening entertainment and evening food!
Now onto the late-night snack to get you through all that dancing! A new addition to our 2023 ‘To Munch’ menu is
FALAFEL PITTAS
The middle eastern street food classic. Warm pittas are stuffed with falafels then served with a selection of salads and accompaniments for you and your guests to choose from.
Accompaniments to include:
Hummus, Tabbouleh Salad (bulgur wheat with herbs, tomatoes, peppers, spring onion, lemon and paprika), spiced chickpeas, pickled vegetables, fresh carrot salad, tomato and cucumber salad, feta.
Dressings to include:
Mint yogurt, citrus dressing, chipotle mayo, tzatziki, tahini dressing, chilli dressing and sriracha.
What better way to finish off the day!
